An elegant, rich and creamy mousse made with plain chocolate and fresh orange. With just 5 ingredients and naturally gluten and wheat free, this recipe will become a firm favourite when you are in need of a stylish dessert.
- 225g good quality dark chocolate - broken into pieces
- 2 tbsp icing sugar - sifted
- Juice and zest of 1 large orange
- 4 eggs - separated
Place the chocolate in a bowl over a pan of barely simmering boiling water (making sure the water doesn’t touch the bottom of the bowl) and stir until the chocolate has melted.
Remove from the heat and stir in the juice and zest of the orange and the icing sugar. Then beat the egg yolks into the mixture.
In a clean bowl, whisk the egg whites until they are light and fluffy. They should form firm peaks that don′t collapse back into the rest of the mix when you lift up the whisk. Gradually fold the chocolate mixture into the egg whites, do not beat or whisk.
When the mixture is smooth and all one colour, spoon into decorative dishes or glasses and allow to chill in the fridge.
Serve with a wedge of orange, some whipped cream, candied orange slice or chocolate shavings.
