Homemade Chicken Nuggets

Ingredients - makes roughly 20 nuggets


2 large chicken breasts, cut into chunks
1 onion, finely chopped
1 tbsp fresh parsley
50g/2oz gluten free/wheat free white breadcrumbs*
1 large granny smith apple, peeled and grated
1 gluten free/wheat free chicken stock cube dissolved in 1 tbsp boiling water
gluten free/wheat free flour, for coating
sunflower oil for frying
Salt and pepper

Method


Begin by squeezing out a little excess liquid from the grated apple with your hands.
Put the chicken, onion, parsley, breadcrumbs, apple, dissolved stock cube, salt and pepper into a food processor and blitz for a few seconds until thoroughly combined.

Using your hands, form into about 20 balls and then squash them slightly to form nuggets. Coat them in flour and fry in shallow oil until lightly golden and cooked through which will take about 10 minutes.
*Time saving tip- Why not liquidise a loaf of gluten free/wheat free bread and put it in 4 freezer bags and store in the freezer until needed.
