Asian Style Prawns

These Asian-style prawns make a super starter; serve them at your next dinner party and watch everyone dig in. They are sure to leave your guests wanting more.

Ingredients

  • Sunflower oil - for frying
  • 24 king prawns - peeled - deveined and heads removed but tails left on
  • 200ml coconut milk
  • 100g gluten and wheat free plain flour (I use Doves Farm)
  • 25g cornflour
  • ½ tsp salt
  • 1 large free-range egg
  • 1 tbsp cumin seeds
  • 1 tbsp coriander seeds
  • 120ml olive oil
  • Bunch fresh mint
  • Bunch fresh basil
  • Bunch fresh coriander
  • 1 red chilli - deseeded
  • 1 clove of garlic
  • Juice of 2 limes
  • 4cm piece fresh ginger
  • ½ tsp salt
  • Lime wedges to serve
  • A few coriander leaves for decoration
