Having a classic cheese sauce recipe is crucial, especially if you follow a gluten and wheat free diet, as most shop bought varieties contain wheat. It is very versatile and can be used in many recipes such as pasta dishes, cauliflower cheese or to top a homemade lasagne.
- 500ml milk
- 4 tbsp cornflour
- 150g grated mature cheddar cheese
- salt and freshly ground black pepper
In a cup, put the cornflour and 4 spoons of the milk and stir until you have a smooth paste. Heat the remaining milk in a large pan until it is almost boiling and remove from the heat. Stir the cornflour mixture and then stir the paste into the hot milk. Return the pan to a low heat and stir until the sauce has thickened. Finally stir in the grated cheese, and season with salt and black pepper.
