Hunters Chicken Recipe
Diet: Gluten and Wheat Free
A deliciously sticky and smoky dish that makes a great dinner party offering. Poaching the chicken first ensures the chicken breast remains succulent and moist.
- 2 skinless and boneless chicken breast fillets
- 4 rashers smoked streaky bacon
- 125ml gluten and wheat free BBQ sauce
- 2 handfuls of grated cheese
Preheat the oven to 190° C, gas mark 5.
Bring a small pan of water to the boil. Add the chicken and poach gently for 10 minutes. Drain and place the chicken breasts in an ovenproof dish.
Wrap each chicken breast with two rashers of bacon and cover with the BBQ sauce and sprinkle with grated cheese.
Bake in the pre-heated oven for 12-18 minutes, depending on the size of the breast, until the cheese is bubbling and the chicken is cooked all the way through.
You may like to serve these with sweet potato fries, sweetcorn and peas.
