Diet: Gluten and Wheat Free
Fajitas are a fun family meal, cooked here with chicken. You can also make them with steak, prawns or just vegetables. Put all the ingredients in the middle of the table and let everyone make their own. Get creative and enjoy this family mealtime experience together.
- Gluten and wheat free wraps – (I use Warburtons)
- 3 chicken breasts - cut into pieces
- ½ tsp paprika
- ½ tsp mild chilli powder
- ½ tsp cumin
- ½ tsp oregano
- 2 tbsp olive oil
- 2 garlic cloves - crushed
- 1 large onion - peeled and sliced thinly
- 1 red pepper - de-seeded and sliced
- 1 yellow pepper - de-seeded and sliced
- 150g cheddar cheese - grated
- ½ cucumber - sliced
- small tub sour cream
- 1 avocado - sliced
- 2 large tomatoes - sliced
Coat the chicken pieces in the herbs and spices and allow to marinade for an hour.
Heat 1 tbsp of the oil in a large frying pan and brown the chicken, making sure all the spices are also added, stirring occasionally for 3-4 minutes. Add the other tbsp of oil and sauté the garlic, onion and peppers for 5 minutes, in the pan with the chicken. Test the chicken and make sure it is thoroughly cooked.
Heat the tortillas in the microwave according to the instructions on the packet.
Place some of the chicken mixture along the centre of each wrap, top with some grated cheese, avocado, cucumber, tomato and a dollop of sour cream and roll.
If you don’t have much time, you can buy some very good gluten and wheat free fajita mixes. Simply heat the oil, add the chicken and the fajita mix and cook until brown. Add the onions and peppers and continue cooking until the chicken is cooked through.
